BeCl2 is soluble in ethanol because when covalent bond formation take place due to the high elecrtonegativity difference b/w Be and Cl the bond becomes polar covalent bond. And as we know that ethanol is slightly polar and lol dissolved in like therefore BeCl2 dissolved in ethanol.
