Equal and opposite forces do cancel out.
Are you talking about action and reaction forces??
Cosider this :
If you are pushing a table , you are applying a force on the table . and this is the action force.
Action force acts on the table and not upon you.
The table exerts an equal but opposite force on you . This force is called reaction force .
The reaction force acts on you and not upon the table .
You have to consider the force acting on one and the same object to determine the motion of the object. Hence, these forces do not cancel out.
