It’s simple, the answer is in question itself.For now, we can forget what dipole, or electric field is, let’s just focus on the equilibrium.In unstable equilibrium the particle has more energy that’s why it is unstable while in stable equilibrium it has less energy and that’s the reason for it being stable.So there has to be a change in energy when moving from unstable state to stable state, else we can’t change our state
