There are 2 types of Olympiads.
1. Those which are privately organised. The applications for these are generally through schools and colleges.
While these are pretty good exams, their "international" factor tends to come just from the fact that a few people from Muscat, or Singapore, etc also appear for it.

2. These are the real deal, in my opinion.
My answer will focus on the Indian student (as that is the process I am familiar with).
These are International Olympiads in Physics, Chemistry, Biology, Mathematics, Astronomy, Junior Science, Informatics, Earth Sciences. (May not be exhaustive) (Links below)
You do notneed to apply for these through your school. Anybody who is eligible to appear (mentioned in the rules) can do so.
These exams have multiple levels, where only the top percentage go through, and finally, the best 4-5 students get to represent India at the International Olympiads, competing with about 100 other countries.

These Olympiads are a really interesting and educative journey, and I'd definitely recommend preparing and appearing for them!
