Dear Apurv,
we know that capacitance of a capacitor is calculated by, C=ke0A/D
Where e0 is permeability of free space , dielectric in capacitor increases the value of e0 and this increase led to increase in capacitance of capacitor.
energy stored in capicitor is given by , ½ CV2 this will increase because C has increased due to dielecrtic.
