(1) I2 ------> I- + IO3-
(2) h3po2 --------> ph3 +2H3PO3

I in I2 = 0 
I in I- = -1 
I in IO3- = +5 

So, I loses 5 electrons to form IO3-. I would consider the n factor to be 5 in that reaction. (You will need to form 5 I- ions at the same time.
