When you mix the two, Sodium acetate will be converted to acetic acid. However, it may be reversible, depending on the amount of acid used.
the reaction will be 
CH3COONa + HCl -------> CH3COOH + NaCl 
HCl is strong acid. it will dissociated to be H+ and Cl- completely. On the other hand, CH3COONa is a salt form of weak acid. it will be strong basic. so CH3COONa act like basic in this reaction. 
so, they will going to form a buffer,
