How can saline hydrides remove traces of water from organic compounds ?

When a saline hydride is added to an organic compound, they react with water present in it to form metal hydroxide and hydrogen gas. The hydrogen gas escapes into the atmosphere leaving behind the metallic hydroxide. Which can easily be separated from water by distillation or evaporation
