Solids are less soluble in cold solvents than in hot solvents. Cooling the flask increases the saturation of the solution and so increases the amount of crystals that come out of solution. Ethanol is used to wash the crystals as copper sulfate is much less soluble in ethanol than water, and so it does not dissolved much of the product. The ethanol is cooled to help reduce the amount of crystals dissolved even further. Essentially, you are purifying the crystals by washing out anything that isnt copper sulfate (and presumably these impurities are more soluble in ethanol than the crystals themselves) and, as ethanol is volatile, it is far easier to dry copper sulfate with ethanol in it than with water in it.
