Humans cannot digest cellulose because we haven''''t got the digestive system to break them down but animals like goats has got some microbes called methanogens which enables them to digest the cellulose.

our digestive systems haven''t these cellulose molecules because cellulose is doesn''t break down in our digestive system where as in animals it is easy to breakdown the cellulose molecules

Since Some animals, particularly ruminants and termites, can digest cellulose with the help ofsymbiotic micro-organisms that live in their guts. Humans can digest cellulose to some extent, however it mainly acts as a hydrophilic bulking agent for feces and is often referred to as "dietary fiber".
