the hinge prevents translation in all directions, the roller only in one direction. Additionally, you should note that there is zero moment reaction at these supports - rotation is not restricted.
As for visualizing it:
A hinge can best be visualized by, a hinge. Imagine a horizontal door, a hinge support in a model acts just like a real life hinge.
For a roller, picture a beam sitting on a cylinder. Nothing to connect them together other than gravity. If the beam were to move sideways (for example, expand with a temperature increase), the roller would just roll, allowing the beam to move. Some of the small bridges you drive across actually use this as a support, a steel cylinderunder each beam, sitting on a steel plate.
