Dear Jash,
In M.Tech you will have to take up course work which has equal credits (sometimes depends on the department, may not be the same) to that of your research work (Thesis) and is compulsory before you start working on your thesis problem. The admission to M.Tech is purely based on a technical exam and a technical interview(some institutes might just take you based on the GATE scores, like IIT Kanpur Aerospace Engineering department).
I will differentiate between the MS programme in India and other countries. In India, to my knowledge IITM is the only institute offering an MS programme in Aerospace Engineering, the duration is roughly around 3 years (might get extended depending on your work and your guide). The programme is mainly research oriented unlike M.Tech and you spend a lot of time(more than just a year like in M.Tech) on your thesis problem. The admission is through GATE scores. Coming to MS from institutions outside India (except Europe, who dont ask for your GRE-TOEFL scores), you need to take GRE-TOEFL and based on these scores and few other criteria you get admitted. And the programme structure is similar to M.Tech, with a fewer courses to do and more stress is put on your thesis work.
Coming to which is better, it completely depends on what you expect out of the course, "mostly" nearly 7 out of 10 join M.Tech keeping job prospects in mind. MS from an university outside India is a good option, and definitely better than M.Tech and MS(in India), because it is more valued and has good research and job opportunities at the end of the course.
2. By flight training if you mean you get to fly or be a co-pilot and have joy rides, I am afraid that wouldn t be a part of your master s programme unless you join certain specialization like Flight Mechanics and even here there is no such activity in the course. In this group you might have few sorties taking readings and other data related to your work and may be a few joy rides, but those won t be like training sessions. In IIT Kanpur, you can join the Gliding club where you have to undergo certain number of sorties and you can be given a flying license, this is completely out of the course work and more of a serious hobby.
