I think the best IIT is among the three IITS - Kanpur, Kharagpur, and Bombay.

As you might have seen in the various surveys , published in magazine like India Today, CSR, Mathematics Today, etc, these three IITs remain at the top , but within the top three their order varies.

For specific Branches

IIT Delhi - Electrical is considered the best

IIT Kanpur -Computer Science and Aerospace are considered the best

IIT Kharagpur and Bombay- Mechanical is considered best

IIT Roorkee - Civil is considered best

IIT Chennai - Biotech and Mechanical are considered best
