Saponification is the alkaline hydrolysis of the fatty acid esters.
example – The chemical reaction between any fat and sodium hydroxide is a 
saponification reaction. triglyceride + sodium hydroxide (or potassium hydroxide) → glycerol + 3 soap molecules
Saponification value is expressed by potassium hydroxide in mg required tosaponify one (1) gram of fat. It depends on the kind of fatty acid contained in the fat. 
its nothing but a simple ester hydrolysis .
