Gastric juice is a variable mixture ofwater, hydrochloric acid, electrolytes (sodium, potassium, calcium, phosphate, sulfate, and bicarbonate), and organic substances (mucus, pepsins, and protein). This juice is highly acidic because of its hydrochloric acid content, and it is rich in enzymes.
