Fermentation is ametabolic process in which an organism converts a carbohydrate, such as starch or sugar, into an alcohol or an acid. For example, yeast performs fermentation to obtain energy by converting sugar into alcohol. Bacteria perform fermentation, converting carbohydrates into lactic acid.
