Cow milk contains a naturally colouring pigment which gives it a slight yellow colour. The same pigment is found in some of the vegetables like carrots. Dairy products like butter have added Beta carotenoid or annato to give butter yellow colour. A carotenoid which is precursor of Vitamin A ,called Beta -carotene is present in cow milk which gives a yellowish tint to cow milk.

The intensity of colour is a combined effect of casein and fat globules disperesed. Both of them disperse light and carotene and xanthophylls ,which gives it a yellowish tint. The intensity of yellow colour depends the breed of cow ,size of fat globules ,fat percentage and what the animal is being feeded.

Buffalo milk is white in colour ,more thick ,has high fat content than cow milk. Buffalo milk has more Vitamin A , protein ,calcium and other minerals like magnesium , potassium and phosphorus which are good for bones and body muscles. The components of buffalo milk mix together to form tiny particles which reflects light . Baffalo milk does not have pigment Beta carotene so it is white in colour.

Cow milk is yellowish-white in colour, while buffalo milk is creamy white. In buffalo milk beta- carotene pigment gets converted to colourless Vitamin- A, which makes it less yellowish than cow milk.
