We use the sign convention while deriving the mirror formula, but again we use it while solving numerical problems. So in a way, isn't the use of the sign convention neutralized??

Sign convention is used just to make the problms easier and understandable ,

Theres no restrictions on you while choosing sign conventions You can choose your own conventions but be careful while using them,
