Glucose exist in open chain form as well as cyclic form in aqueous solution. However open chain is in traces. In cyclic form aldehyde group is not free to give the reaction. Bisulphite reagent is a weak reagent, so it cannot open the cyclic structure of glucose and thus don`t give bisulphite addition. Hence do not give bisulphite test.
