What is the difference between pyrolysis and cracking in organic chemistry?

Pyrolysis is a thermal treatment in the absence of oxygen. Cracking is the result of a pyrolysis treatment to hydrocarbon feedstock, the breaking of long hydrocarbon molecules into smaller ones.

Another term you often find is “destructive distillation”, which is one variant of pyrolysis typically used for the decomposition of coal into coal gas, coal oil, coal tar and coke.
