NaOH is used in various organic reaction. Discussing all here, may not be possible. But here are a few ones most commonly asked...

Canizzaro Reaction involves used of Conc. NaOH solution for conversion of aldehydes with no alpha carbon to Carboxylic acid and alcohols (Disproportioantion reaction).

Aldol condensation uses the use of Dil. NaOH for converion of aldehydes with alpha hydrogen atoms to aldols.

NaOH is also somtmes used instead of KOH for elimination reactions.

NaOH:CaO in 3:1 called soda lime are used in Decarboxylation reactions.

NaOH, AgNO3 is used to decompose trialkyl borides in alkanes during Hydroboronation- Oxidation reactions.

It is used to form Sodium ethoxides from alcohos and sodium salts of carboxalic acid which in turn is used for preparation of soap.

NaOh gives N+ and OH- and Oh- is a good base which is used in manh reactions of organic chemistry.It may be used in taking out H+ as it is a base which take acid and it may be used it canizaro reaction t make Hydride ion which is very rear.This can also be used in Aldol condensation which helps in formation of double bond containing carbonyl compounds with Water as Bi product :)
