these may be some of explanations.
  • while doing sit-ups we throw our hands downward which gives us extra push upward which helps us slow down while going downward.
  • also when we keep our hands behind our head center of gravity of our body goes up so it is difficult for us to balance our body.
further reasons can be provided in biology.

Because the farther the distance, the more work you have to put into doing sit-ups. 

 Fdcos(theta) = work. where d is the distance. 

When you cross your arms on your chest, the distance is shorter than when you put it on your head, therefore the work you do is lesser.
