why does hydrogen so easily take the place of oxygen in organic molecules during reduction reactions?

It depends on the kind of catalyst you are using and the solvent in the reaction
Like LiAlH4 can not reduce alcohol but can reduce carbonyl compounds, so it depends on which oxygen is leaving.
