hey student..
i think u must be aware of the concepts of lewis acid and lewis bases.
so although u say NH3 is very stable but still it forms a dative bond with BF3 to form an adduct. in this case, on formation of the dative bond, the valency of B is getting complete and hence is the stable and driving force for the formation of a dative bond.
