so, you can clearly see that the number of unpaired electron is in 3d subshell and that is equal to 1.

The actual electronic configuration of Manganese(Mn):
1s22s22p6,3s23p6,4s23d5
Mn4+: 1s2,2s22p6,3s23p6,3d3
Because due to tje presence of +ve charge first the electron removed from S-subshell till all charged are removed and then remaining from d-subshell.
