Iodine atoms is also bulkier but can be treates as a single bulky atom which could be enough for the Li small size atom to form the bond.
However, in lithiumhydrogencarbonate, HCO3- constitutes many atoms and forms a  more heavy/bulkier group which is very dfficult to bear for li.
