gauss law is used to find electric field due to various arrangement like charged sheet , thin infinite straight wire in very short period of time or u can say short cut to find it.
gaussian surface is made to calculate flux or charge inside
gauss theorem is valid for symmetrical as well as unsymmetrical system of charges

A gauss surface is required because gauss law can be applied on a closed surface only. thus to find electric field due to various charge distributions suitable gauss surfaces are used.
