My AIR is 2345. Based on last yr cutoff I have chance in Electronics & Ele at Guwahati or Chemical at Roorkee or Madras(5yr). Which is better in term of future prospectus. What if I opt for Ele/Mech/CSE at New IITs like Hyderabad/Gandhinagar/Rajasthan. Madras 5yr chemical is better or Ele/Mec at Hyderabad.

Both the options are good .. also IIT hyderabad is good option if you get the core branch like electrical , cse there .. But i wud like to suggest you to jus clear ur mind and think of what u love best. dont compromise on branch  coz u got to live with it all ur life.
