Q. Why do we use excess salt and sugar in Pickles and James respectively?

Hello Student

Excess salt and sugar creates higher concentration the microbes like fungal spores and bacteria are plasmolysed and squeesed to death.

Excell salt makes the pick hypersonic and so if microbes like bacteria come near the pickles, exosmosis occurs in bacteria as they have relatively higher concentration of water in them as compared to picles(the are hypotonic). And so the microbes are plasmolysed and soon they die. 😀😀😀

  1. We use  salt and sugar in pickles in murabbas because they preserve them from  harmful microorganisms
