Dear student 
In pleiotropy a single gene affects many phenotypic characters. Mutation in this gene will have affect on many phenotypic traits simultaneously. 
Here, In phenylketonuria, there is tyrosine deficiency, mental retardation,, light hair and skin color. So the mutant gene affects many phenotypic characters therefore it is an example of pleiotropy.
