As the seed matures water content is reduced.where does it go?consumed or evaporated

You could have observed seeds getting dried upon keeping in shade or sunlight.
During drying process in shade or in light the water gets evaporated.
its not consumed, upon measuring the weight we can findout the water content present upon drying the agrcultural products.
After drying the seeds show their dry weight,which represent the alone weight of the nutrients in them.
