Mono-, di-, and polysaccharides are types of carbohydrates, which are organic compounds made up of carbon, hydrogen, and oxygen atoms. They differ primarily in their chemical structure and complexity:

Monosaccharides:

Monosaccharides are the simplest form of carbohydrates and cannot be broken down further into simpler sugars.
They consist of a single sugar molecule, typically containing 3 to 7 carbon atoms.
Examples of monosaccharides include glucose, fructose, and galactose.
They are the building blocks of more complex carbohydrates and serve as a primary source of energy for living organisms.
Disaccharides:

Disaccharides are carbohydrates composed of two monosaccharide units joined together through a glycosidic bond.
They are formed by a condensation reaction (dehydration synthesis) between two monosaccharides, resulting in the release of a water molecule.
Common disaccharides include sucrose (glucose + fructose), lactose (glucose + galactose), and maltose (glucose + glucose).
Disaccharides are often found in foods and are broken down into monosaccharides during digestion to be absorbed into the bloodstream.
Polysaccharides:

Polysaccharides are complex carbohydrates consisting of multiple monosaccharide units joined together through glycosidic bonds.
They can contain hundreds to thousands of monosaccharide units.
Polysaccharides serve various functions in living organisms, including energy storage and structural support.
Examples of polysaccharides include starch, glycogen, and cellulose:
Starch is the primary storage carbohydrate in plants, consisting of glucose units joined in long chains.
Glycogen is the main storage carbohydrate in animals, similar in structure to starch but more highly branched.
Cellulose is a structural polysaccharide found in the cell walls of plants, providing rigidity and support.
