sugar is covalent compound having formula C6H12O22 and covalent compounds have weak vanderwall or bond forces and hence easily splits and easily soluble in polar covalent compounds is water

The bond between the oxygen and hydrogen in sugar (O-H) gives the oxygen a slight negative charge and hydrogen a slight positive charge.since water is a polar molecule it attracts the negative and positive charge of sugar. Hence sugar dissolves in water.
