The products obtained on the hydrolysis of sucrose are glucose and fructose. Glucose is dextrorotatory and fructose is laevorotatory. Sucrose is dextrorotatory. The resulting solution after hydrolysis is laevorotatory. The product is called invert sugar as during hydrolysis of sucrose, the sign of rotation is changed from (+) to (-).
