its because of the refraction of the sunlight to our eyes when the the sunset occur sunligt goes from many layers of atmosphere having different densities and thickness so it comes to our eyes by bending so we are able to see even the sun after the sunset

This occurs due to atmospheric refraction. When the sun is below the horizon the sun rays still manage to reach our eyes due to atmospheric refraction.
